Holiday advice for new rider

Hello and thank you for reading this post.

I am new to riding beginning with lessons some 2 months ago. Always had the desire to learn to ride and love every second.

I have been looking for inspiration for riding holiday but find swamped for choice, Lifetime ambition is to do some ranching but do not think I am of standard at moment, so any advice welcome for riding holiday for single 50 year old gentleman would be most welcome .
