Winter grass

When does grass lose its potency? I have 2 acres which were cut for hay in the summer and rested, I would like to graze over the winter but they are a bit lush at present. When will it be safe to graze in there?

I think it depends on the weather a lot - we've had such odd weather this year that there is a lot of excess grass growth. Can you not strip graze?
